Is anyone else still immobilized in your post-Christmas cocoon? I’m gradually working up the energy to start being productive again…we’ll see how that goes. (Exhibit A: I started this extremely short post 2 days ago and am just now getting around to the Publish button.)
In the mean time, I’ll start powering up with simple, wholesome, and satisfying meals like this turkey apple goat cheese wrap. The textures are ON POINT with creamy avocado and goat cheese, juicy crisp apple and red onion, some meatiness, and a toasty crunch from the walnuts. And the sweet-savory-tangy-herby flavor is unbeatable–lunchtime party in your mouth.
If you have any leftover turkey from the holidays, this a fantastic way to use it up. (But if your family is like mine and devours all the meat, deli turkey also works perfectly.)

Turkey Apple Goat Cheese Wrap
Ingredients
- 1 whole grain tortilla
- 1/2 oz ripe avocado
- 1.5 - 2 oz turkey (leftover roasted turkey or deli)
- 1/3 apple, thinly sliced
- 1/2 oz goat cheese, crumbled
- a few thin slices red onion
- 5g walnuts, toasted and chopped
- sprinkle fresh thyme leaves (optional)
- small handful spinach
Instructions
- Mash avocado on one half of the tortilla. Near the center, layer turkey, apple slices, goat cheese, red onion, walnuts, fresh thyme, and spinach. Roll tightly and slice in half.
- If taking on-the-go, wrap each half in plastic wrap to hold it together.
