Happy Independence Day! I came back just in time to celebrate our beautiful, free, and unrivaled nation, which I am blessed to call home.
I thought I had to share something red, white, and blue for festivity’s sake (and to keep up with the cute Insta and Pinterest trends), and I realized that I had not yet officially shared this PERFECT, thick and voluminous, sweet and refreshing, simple Berry Greek Yogurt Smoothie. How dare I keep this essential from you for so long? This basic formula has become my default, and, as soon as you try it, I won’t be surprised when it becomes yours too.
So no, it’s not exactly red, white, and blue, but it’s all those colors married into this gorgeous speckled purply pink. Even better, right?
My favorite way to drink this smoothie is at breakfast, paired with something like the turkey bacon/fried soft egg/white cheddar/herbs de Provence panini on a {thinly sliced} whole grain English muffin, shown below. Together, this is definitely one of the most satisfying and delicious breakfasts I ever make. Filling, wholesome and balanced, easy to throw together, refreshing and comforting all at once, and oh my flippin’ gosh so YUMMY.
But this smoothie is really perfect at any time of day! As a snack, pre- or post-workout drink, breakfast, or as you sit outside celebrating our nation today. Enjoy!
