Flavorful and satisfying club salad loaded with fresh sweet summer corn, tomatoes, peppers, avocado, black forest ham, blue cheese, tangy pickled red onions and peppadews, and spiced pecans with a creamy honey dijon dressing.
Another bright fresh summer medley coming at you. This one with a classic “club salad” feel, but elevated with layers of flavor and satisfying ingredients. Starting with our sweet juicy corn and grape tomatoes, crisp peppers and creamy avocado. Then comes the smokiness of the ham, the tang of pickled red onions (recipe) and sweet-spicy pickled peppadew peppers, and the sharp salty punch of creamy high-quality blue cheese. The quick homemade honey dijon dressing is altogether creamy and light, with a kick of apple cider vinegar and rich umami flavor from a touch of worcestershire sauce and smoked paprika. Finally, spiced praline pecans add a mouthwatering final touch that brings the whole thing over the top. These are some of my favorites to find in store, or make your own at home!
Served here with fresh sliced peach and Beanfields chips (Pico de Gallo and Cheddar Sour Cream are some of my favorites!)
Ham & Honey Dijon Club Salad
Notes
Makes just enough for 1 medium salad. Multiply dressing ingredients if you like extra.
Ingredients
For the salad:
- Romaine or green leaf lettuce
- ~1.5 oz black forest ham (or your favorite), torn
- ~1/4 cup fresh corn kernels
- ~1/4 cup cubed avocado
- ~5 grape tomatoes, halved
- 2-4 Tbsp red bell pepper, thinly sliced and roughly chopped
- 1-2 Peppadew peppers, diced
- ~1 Tbsp pickled red onions
- 2 Tbsp crumbled blue cheese or gorgonzola
- 3-4 spiced praline pecans, roughly chopped
For the honey dijon dressing (just enough for 1 medium salad):
- 1/2 tsp dijon
- 1/2 tsp mayo
- 1/2 tsp extra virgin olive oil
- 1/2 tsp honey
- 1/2 tsp apple cider vinegar
- 1/4 tsp worcestershire sauce
- pinch smoked paprika
- sprinkle fresh parsley (optional)
- pinch sea salt, to taste
- ground black pepper, to taste
Instructions
- Assemble salad ingredients in a bowl.
- In a separate small bowl, whisk dressing ingredients until completely smooth. (You can use a small measuring spoon to mix a small batch, a whisk for a large batch, or add to a small sealed container and shake vigorously.)
- Pour dressing over salad and toss to combine. Enjoy!
