Super short post today because my busyness level has recently reached its utmost maximum. Chairing UF Honors Involvement Conference (mission accomplished today, yay!), working in lab, teaching fitness, volunteering, juggling 5 college classes, cooking and exercising and doing chores…Who needs sleep, right?
Regardless, I felt this sandwich was worth sharing. It features everything you could dream of in an egg panini: a crisp pressed bun with creamy avocado, smoky turkey bacon and melty cheese, flavor-packed sun-dried tomatoes and spices, and a soft fried egg (soft enough to still taste runny, but not so runny that it makes a mess and ruins the crispiness of the bread).
If you can find {high quality} smoked mozzarella or smoked gouda, then I highly recommend both of these! For this sandwich, for other sandwiches, for pasta and potatoes and omelets, for life.
Egg, Bacon, Sun-dried Tomato, and Avocado Panini
Notes
*To make the sandwich thinner, use a serrated knife to shave down some of the bun. Also may sub sliced bread.
**I'm in love with both of these smoked cheeses, but you can use any other type like provolone, Swiss, jack, cheddar, etc.
Ingredients
- 1 slice turkey bacon
- 1 whole grain bun*
- 12 g ripe avocado
- 1/4 tsp minced garlic
- sprinkle dried Italian seasoning
- pinch smoked paprika
- salt and pepper
- 1 egg
- thinly sliced red onion
- 6 g thinly sliced sun-dried tomatoes
- 12 g smoked mozzarella or gouda**, thinly sliced
Instructions
- Cook bacon in a nonstick skillet over medium-low heat on both sides until crisp. Remove and cool. Then tear into pieces.
- Meanwhile, use a fork to mash ripe avocado and garlic onto one side of the bun. (If not very ripe, mash with garlic separately, then spread onto bread.) Sprinkle on Italian seasoning, a pinch smoked paprika, and salt/pepper to taste. Top with bacon pieces.
- Heat the same skillet used for the bacon over medium-high heat. If necessary, add a little oil to pan. Crack egg into pan and cook, undisturbed, 1-2 minutes. Gently flip. Puncture the egg lightly, allowing just some of the yolk to spill out. When it reaches your desired degree of doneness, transfer to bun on top of bacon.
- Layer on remaining ingredients--cheese, onion, and sun-dried tomatoes. Top with other half of bun.
- Transfer to the same pan over medium heat. Heat a few minutes on each side, until crisp.
- Enjoy!
