The “quesadilla:” simple, cheesy, comforting, and full of possibilities. And you know we won’t be skimping on flavor.
This awesome salty-sweet-savory-smoky combo takes the basic tortilla + cheese formula to a new level. All it takes is crisp turkey bacon, lightly sautéed apple and red onion to get up those bacon flavors from the pan, a slather of BBQ sauce (Stubb’s Original and Woodstock Original are my all-time favs), and freshly shredded sharp cheddar. Toasted up to melty, crisp perfection, all in that one pan. Done!
Notes
*I highly recommend Stubb's Original or Woodstock Original. Both are not too thick or sweet, not too hot, and LOADED with flavor.
Ingredients
- 1 slice turkey bacon
- 1/4 apple (I use Fuji), chopped
- ~1 Tbsp thinly sliced red onion
- 1 whole grain tortilla
- 1/2 Tbsp BBQ sauce*
- 1/2 - 1 oz sharp cheddar, freshly shredded
- handful chopped spinach (opt.)
Instructions
- Cook bacon in a medium/large skillet over medium heat on each side until crisp.
- When bacon is almost done, add apple and onion to same pan, stirring to scrape up browned bits. Sauté a couple minutes, or just until apple is crisp-tender.
- Remove apple/onion and bacon from pan. Carefully wipe pan clean with a damp paper towel. When bacon is cool, tear into pieces.
- On half of tortilla, spread BBQ sauce; layer bacon pieces, apple and onion, shredded cheddar, and spinach if desired. Fold in half.
- Return pan to medium heat. Add stuffed/folded tortilla and cook several minutes per side, or until cheese is melted and tortilla is crisp.
- Remove from pan, slice, and enjoy!
