As I said in my most recent post about the extra crispy baked buttermilk chicken tenders, the cheddar chive cornbread waffle deserves a post of its own. Or like a whole website. Because these waffles are EPIC. If you’re hesitant to jump on the savory waffle train, let a hunk of crispy, soft and dense, cheesy cornbread bursting with juicy sweet fresh corn, in waffle form, change your mind.
What really make these cornbread waffles special are the fresh ingredients like whole sweet corn, chives, and freshly shredded sharp cheddar. Combined with hearty whole grain cornmeal and tangy buttermilk goodness, you get a texture like no other.
The applesauce is another secret that gives them light fluffiness on the inside (and keeps them light in calories too!). Overall I’d call this healthy Southern comfort at its very finest.

Whole Grain Cheddar Chive Cornbread Waffles
Ingredients
- 30g (1/4 cup) white whole wheat flour
- 30g (3 Tbsp) cornmeal (whole grain, medium grind)
- 4g (scant 1/2 Tbsp) cornstarch
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp sea salt
- 1/2 tsp dried chives
- 2 tsp honey
- 1/4 cup unsweetened applesauce
- 1/2 - 1 tsp fresh minced garlic
- 1 tsp olive oil
- 1/4 cup low fat cultured buttermilk
- 2 egg whites or 1 whole egg
- 30g (1/4 cup) fresh corn kernels
- 21g (~1/4 cup) freshly shredded sharp cheddar
- chopped fresh chives for topping
Instructions
- Mix flour through dried chives in a bowl.
- In a separate bowl, thoroughly whisk honey through egg.
- Add dry ingredients to wet and stir just until combined (don't over-mix!). Fold in corn and cheddar.
- Heat waffle iron and cook on crispy setting. (Makes 2 small/medium or 1.5 large waffles.)
- Transfer directly to a wire rack to cool.
- For the ultimate crispy texture, reheat for about 2 minutes directly on the grates of a toaster oven or oven.
- Top with fresh chives. Enjoy on their own or paired with crispy chicken and/or runny fried eggs.
